Overnight Pumpkin French Toast Casserole

Ingredients:

 

1 Loaf of Evangeline Maid bread

1-8oz package of cream cheese, cubed

1/2 cup milk

6 large eggs

1-12oz can evaporated milk

2/3 cup packed brown sugar

2 tsp pumpkin pie spice

1 cup canned pumpkin

1/2 tsp salt

1/2 cup chopped pecans

Confectioners sugar (optional)

 
 

 

Directions:

 
  1. Cut the bread into quarters and arrange in a greased casserole dish.

  2. Place the cubed cream cheese between slices of bread.

  3. In a large bowl, whisk the milk, eggs, evaporated milk, brown sugar, pumpkin pie spice, canned pumpkin, and salt.

  4. Pour the mixture over the bread.

  5. Cover and refrigerate overnight.

  6. Bake, covered, for 35 minutes.

  7. Remove cover, add chopped pecans and bake for an additional 15-20 minutes.

  8. Serve warm, topped with confectioners sugar.
